Vegetables are essential ingredients of most Korean dishes, which are rich in nutrients from vitamins and minerals to fibers that you can`t get from meat and grains, and some are even edible raw after washing with water. Although vegetables are useful and familiar ingredients, we often do not know what their flowers look like. Korea Post is issuing the commemorative stamps Flowering Vegetable Plants depicting flowers of vegetable plants, of which the leaves and seeds are familiar to us. Arctium lappa L. (greater burdock) is a Eurasian species of root vegetable that thrives in soil as its edible part is grown underground. Its stem can grow to reach 50 to 150 cm, and its roots can stretch 30 to 60 cm straight underground. As it belongs to the family Asteraceae, the flowers are dark purple and grouped in globular capitula. Its peculiar shape, color, and size catch the eyes of many. Although it may look like a thistle at a glance, the large capitula is deeply wrapped by the sepal. Greater burdock flowers in July and August and the seeds become ripe in September. Brassica juncea (L.) Czern. (brown mustard) is an herb that originated from China, and it is well known for its spicy taste. This mustard variety is used to make kimchi, and its stalks and leaves can be made as seasoned vegetables. After sowing the seeds in late autumn, they sprout to have several leaves to withstand winter, and they have yellow flowers the following April and May. Stalks grow above the inflorescence and continue to flower. The length of inflorescence measures about 1 cm and the length of petals resembling rice paddle measures about 8 mm. As it belongs to the family Brassicaceae, the flowers are very similar to rapeseed flower or cauliflower. Unlike similar species, the leaves are not surrounded by stalks, and it features smaller petals with each of them being separate. It attracts many anthophiles every spring as blossoms of brown mustard give a spectacular sight that paints the field yellow. Flowers of greater burdock and brown mustard as shown in the commemorative stamps look more attractive with their vivid colors. Especially, the butterfly-shaped perforation adds an additional depth of harmony that inspires vitality. We hope these commemorative stamps serve as an opportunity to learn about flowering vegetable plants as well as admire their beauty.
